Turkey Panini
An all-time favorite with our test panelists, this panini is delicious and filling.

- 2 oz. thinly sliced reduced-sodium turkey breast
- 1 tbsp. pesto
- 2 thin slices tomato
- 6 leaves baby spinach or arugula
- 1/4 c. shredded part-skim mozzarella cheese
- 2 slices low-carbohydrate bread (such as pepperidge farm carb style)
Directions
- Layer the turkey breast, pesto, tomato, spinach or arugula, and cheese on 1 slice of bread. Top with the other slice. Place in the broiler or toaster oven to toast bread and melt cheese. (You can leave off the top piece of bread to melt the cheese faster, toast the second slice along with it, then put the slices together and enjoy.)
